Ingredients

For the Crust

  • 225 g graham cracker crumbs

  • 75 g of melted butter

  • 50 g of granulated sugar

For the Cheesecake Filling

  • 4 packages (32 oz total) cream cheese, softened (about 908 grams)

  • 250 g of granulated sugar

  • 5 ml of vanilla extract

  • 4 large eggs

  • 240 ml sour cream

  • 150 g Bunalun Frozen Blueberries (thawed and drained)

For the Blueberry Topping

1. Preheat Oven

  • Preheat your oven to 163°C (325°F)

  • Grease a 23 cm (9-inch) springform pan with butter or non-stick cooking spray.

2. Make the Crust

  • In a bowl, combine the graham cracker crumbs, melted butter, and sugar.

  • Press the mixture into the bottom of the prepared springform pan, creating an even crust.

3. Prepare the Filling

  • In a large mixing bowl, beat the cream cheese until smooth using an electric mixer.

  • Add sugar and vanilla extract, and continue to beat until well combined.

  • Add eggs one at a time, beating well after each addition.

  • Fold in the sour cream until the mixture is smooth.

  • Gently fold in the thawed and drained Bunalun frozen blueberries.

4. Bake the Cheesecake

  • Pour the cream cheese mixture over the crust in the springform pan.

  • Bake in the preheated oven for about 55-60 minutes or until the centre is set and the top is slightly golden.

5. Cool and Refrigerate

  • Allow the cheesecake to cool in the oven with the door ajar for about 1 hour.

  • Refrigerate the cheesecake for at least 4 hours or preferably overnight to allow it to set.

6. Prepare the Blueberry Topping

  • In a saucepan, combine the Bunalun frozen blueberries, sugar, and lemon juice.

  • Cook over medium heat until the blueberries release their juices and the mixture thickens slightly.

  • If needed, you can add corn starch dissolved in water to aid in thickening.

7. Serve

  • Once the cheesecake is set, remove it from the springform pan and place it on a serving platter.

  • Pour the blueberry topping over the cheesecake before serving.
