Ingredients
For the Crust
225 g graham cracker crumbs
75 g of melted butter
50 g of granulated sugar
For the Cheesecake Filling
4 packages (32 oz total) cream cheese, softened (about 908 grams)
250 g of granulated sugar
5 ml of vanilla extract
4 large eggs
240 ml sour cream
150 g Bunalun Frozen Blueberries (thawed and drained)
For the Blueberry Topping
50 g granulated sugar
15 ml lemon juice
5 g corn starch (optional for thickening)

METHOD
1. Preheat Oven
Preheat your oven to 163°C (325°F)
Grease a 23 cm (9-inch) springform pan with butter or non-stick cooking spray.
2. Make the Crust
In a bowl, combine the graham cracker crumbs, melted butter, and sugar.
Press the mixture into the bottom of the prepared springform pan, creating an even crust.
3. Prepare the Filling
In a large mixing bowl, beat the cream cheese until smooth using an electric mixer.
Add sugar and vanilla extract, and continue to beat until well combined.
Add eggs one at a time, beating well after each addition.
Fold in the sour cream until the mixture is smooth.
Gently fold in the thawed and drained Bunalun frozen blueberries.
4. Bake the Cheesecake
Pour the cream cheese mixture over the crust in the springform pan.
Bake in the preheated oven for about 55-60 minutes or until the centre is set and the top is slightly golden.
5. Cool and Refrigerate
Allow the cheesecake to cool in the oven with the door ajar for about 1 hour.
Refrigerate the cheesecake for at least 4 hours or preferably overnight to allow it to set.
6. Prepare the Blueberry Topping
In a saucepan, combine the Bunalun frozen blueberries, sugar, and lemon juice.
Cook over medium heat until the blueberries release their juices and the mixture thickens slightly.
If needed, you can add corn starch dissolved in water to aid in thickening.
7. Serve
Once the cheesecake is set, remove it from the springform pan and place it on a serving platter.
Pour the blueberry topping over the cheesecake before serving.
