Ingredients
2 cups BUNALUN Organic Tomato Passata
2 cups pumpkin puree (canned or homemade)
1 small onion, finely chopped
2 cloves garlic, minced
2 cups vegetable broth
1/2 cup heavy cream (or Bunalun Organic Coconut Milk for a dairy-free option)
2 tablespoons olive oil
1 teaspoon dried basil
Salt and pepper, to taste
Fresh basil leaves for garnish (optional)
Grana Padano cheese, freshly grated (optional)
method
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes or until the onion becomes translucent.
Add the BUNALUN Organic Tomato Passata and pumpkin puree to the pot. Stir well to combine.
Pour in the vegetable broth and season with salt, pepper, and dried basil. Stir thoroughly.
Bring the mixture to a gentle boil, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes. This allows the flavours to meld.
Using an immersion blender or a countertop blender, carefully puree the soup until it's smooth and creamy.
Return the pureed soup to the pot if you use a countertop blender. Stir in the heavy cream (or coconut milk) and gently heat the soup over low heat until it's warmed.
Serve hot, garnished with fresh basil leaves and a generous sprinkle of freshly grated Grana Padano cheese if desired. Serve and Enjoy
