Sweet Potato & Black Bean Burgers with roasted garlic sauce

Ingredients
2 Small Sweet Potatoes or 1 Large Sweet Potato (Approx. 500g)
3 Garlic Cloves, Peeled & Roasted
1 Tin Bunalun Organic Black Beans, Drained, Rinsed & Lightly Mashed
1 Egg, Lightly Beaten
1/3 Cup Breadcrumbs
1/3 Cup Plain Flour
1 Tsp Sea Salt
1 Tsp Smoked Paprika
1/2 Tsp Ground Cumin
3 Tbsp Bunalun Extra Virgin Olive Oil
1 Cup Natural Greek yoghurt
Sea Salt & Black Pepper
4 Burger Buns of Choice
Green Leaves of Choice, Tomato & Red Onion

Preheat the oven to 180C. Cut the sweet potatoes in half and place them on a baking tray together with the garlic cloves. Drizzle with 1 tbsp of olive oil and roast for about 30 minutes until soft, leave to cool.
Once cool, scoop out the potato flesh into a large bowl and squeeze in 1 garlic clove. Keep the remaining 2 cloves to make the sauce.
Add in the black beans, egg, breadcrumbs, flour, salt, paprika and cumin, mix well.
Heat 2 tbsp of olive oil in a large pan. Form the potato and bean mixture into 4 equal patties and fry about 5 minutes on each side until crispy and golden.
To make the garlic sauce: Mix the yoghurt with remaining 2 roasted garlic cloves, a pinch of salt and pepper.
Toast the buns and assemble the burgers using green leaves, tomato and red onion slices and garlic sauce, delicious!
